The formula at American Noodle Bar is simple: seven bucks gets diners a big bowl of chewy Asian noodles plus one of nine inventive broths or sauces (bacon, smoked lobster, sriracha butter, brown sugar/ginger, et al) and one of ten intriguing toppings (like slow-roasted duck or tempura soft-boiled egg). A small selection of non-noodle dishes includes amusing fusion cheeseburger dumplings and edamame hushpuppies, banh mi sandwiches, and ambitious daily specials (sweetbreads, braised pork belly), plus changing homemade desserts like deconstructed baked Alaska. To drink: fresh-tasting homemade sodas, plus inexpensive American wines or microbrews. Obviously, it's not your usual Asian noodle joint, and there's a reason for that: the recipes and concept came from Michael Bloise, formerly executive chef at upscale Wish. Bloise has since left ANB, but no worries; his dishes remain, admirably executed by the well-trained staff.
