The scent of wood smoke fills your nostrils as soon as you open the car door. Stride past hickory woodpiles as large as livestock pens to enter the Western saloon-style eating hall. Grab a longneck or a cold soda from the drink coolers and add a bag of chips or Fritos from the convenience store racks before bellying up to the counter and naming your meat; sliced or chopped, sandwich or plate are the qualifiers, and beans, slaw, potato salad and extra sauce are the sides.
