Francisco Perez carries on his family’s lamb barbecue traditions in the City of Commerce. The space features wood walls, tile floors and a covered patio with communal bench seating. Perez specializes in Texcoco-style barbacoa. Lamb roasts until tender and comes with corn tortillas, lime, onion, cilantro, punchy papalo (summer cilantro) and salsa borracha crafted with pasilla chiles, garlic and onion powder. Consommé --- lamb broth loaded with rice and garbanzo beans --- completes the package. Request pancita, chile-slathered innards like lung, liver and heart, to remedy an iron deficiency. Feeling adventurous? Roasted lamb heads yield tongue, cheek and brain meat. Top tacos showcase huitlacoche (corn fungus) and chicharron de queso, which eschews tortillas in favor of griddled Monterey Jack cheese. Conejo mixiote involves rabbit meat wrapped with chiles, spices and maguey, and steamed in parchment until tender. Grilled quail are juicy and marinated. The flavorful broth of the tortilla soup incorporates tomato, chipotle, chicken stock and epazote, and comes dressed with avocado, pasilla chile pepper and queso fresco. For dessert, firm, creamy flan has caramel sauce and strawberries. Drinks include aguas frescas, Mexican lagers and pulque, a viscous fermented maguey sap beverage flavored with fruit-like blackberry.
