The Le Mans auto race seems worlds away from this grand old country restaurant, where Alain and Xavier Souffont take the time to select choice cuts of meat, to install special ovens so that the Auberge can bake its own bread, to grow rare herbs, fresh vegetables, tender lettuces. This commitment to quality ingredients has everything to do with the pristine flavors of their updated classic cuisine. The cellar, too, is splendid, with bargain bottles from every region.
