In signature steakhouse style, all the hand-cut beef --- including rib-eyes, filets and New York strips, is seared by intensely high heat for that signature steakhouse crust. Flavorful sides (chipotle cheddar macaroni and cheese) and salads (beets, heirloom tomatoes, house-made burrata and arugula) entice, and seafood is well-thought-out, be it North Atlantic lobster tails or broiled Pacific swordfish with couscous and fennel cream. Finish with a familiar cake: carrot, cheese or chocolate lava. Founded by restaurateur Paul Fleming --- the original P.F. in P.F. Chang's --- and William Allen, III, Fleming’s distinguishes itself with a notable wine program with numerous hard-to-find American boutique wines as well as renowned national and international labels. Upping the ante, 100 wines are poured by the glass, and an 80-label reserve list is on hand. The only Missouri location of this steakhouse chain neighbors the metro area’s toniest mall in tree-shaded suburbia. Still, its patrons appreciate a deal, and the happy hour prices on cocktails, appetizers and a topnotch burger ensure the joint is packed before the dinner hour.
