Maizano in Costa Mesa is a project from Jorge Salim and Javier Hernandez Pons of Los Angeles restaurants LA Cha Cha Chá and Loreto. The duo, both from Mexico City, pay homage to Mexican culinary and social traditions, and, as the restaurant's name suggests, Mexican heirloom corn.
