Park Restaurant Restaurant Review:
Chef Antonio Park slices the best sashimi in Montréal at his eponymous Westmount restaurant. Though he dabbles in Korean and fusion dishes --- bibimbap, chimichurri-topped nigiri, and udon soup with kimchi and braised beef --- his Japanese training is impeccable. He’s also one of the only chefs in Montréal with a private fish import license, so the fish he uses is a large cut above most sushi options. Lunch is a steal at $21 for a sushi platter of the chef’s freshest options, but it’s at dinner that Park truly shines. Order the omakase chef’s choice menu and hope for the swordfish tataki with ice wine vinegar and lobster vinaigrette, mackerel belly with Japanese caper peppers, Quebec sea urchin in a carrot-onion sauce with shiso and house-pickled ramps, and torched Chinook salmon. To accompany, try a saké or shoju from the carefully curated list of, again, private imports.
