Prado offers Andalusian/Southern Spanish-influenced cuisine at Omni Scottsdale Resort & Spa at Montelucia, with an artistic flair focusing on wood-fired fare. The setting is chic, with lots of dark wood and Moroccan tapestry, and the mood is relaxed (periodic flamenco dancing punctuates the live music), while some of the best seating is on the patio, overlooking the resort pool and Camelback Mountain. The menu offers dishes like paella (both seafood and vegetarian options) and Rioja braised short rib. The wine list keeps the Mediterranean theme going, featuring a nice array of Spanish wines.
