Zama Restaurant Review:
Zama is chef Hiroyuki “Zama” Tanaka’s ode to traditional Japanese cuisine. Chef Zama, a Tokyo native who studied at Temple University and wound up in the kitchens of Pod and Morimoto, creates pristine offerings of sushi, sashimi and maki; the array of fish is beyond the usual, and includes market-fresh items from parrotfish to golden eye snapper. The cooked dishes don’t disappoint either. We recommend the short rib, braised in Kirin Ichiban beer and served with a miso mustard over crispy noodles. From Berkshire pork tonkatsu to the whole tempura spicy tuna, Zama delivers. There’s a nice selection of wine, beer, cocktails and sakés to complement the cuisine in this chic, gracious atmosphere.
