About the restaurant: Chef Shawn McClain is behind Balla Italian Soul at SAHARA Las Vegas. Décor elements include a bricked ceiling reminiscent of Roman wine cellars and wood and brass fixtures anchored by lit olive trees and Italian photography.
Food & Drinks: The menu features seasonally driven aspects of Italian cuisine and meats prepared in a wood-fired oven. Antipasti selections include marinated octopus with Calabrian pepper; lamb tartare with pickled eggplant; and shellfish toast with clams, mussels, calamari and ‘’Nduja sausage. Pasta selections include linguini with crab, squid ink shells with puttanesca and agnolotti with formaggio. Wood-fired dishes include 22 oz Prime bone-in ribeye with roasted garlic and pork Delmonico with pickled radicchio. An Italian-forward, wines-by-the-glass list and selection of domestic and Italian beers is designed to please a range of palates.
