When a craving for ribs strikes, we often turn to this old-timer with its several locations in Northern Virginia and Maryland. We can stand outside and smell its hickory smoke trailing on the breeze, and that’s enough to whet anyone’s appetite. You’ll find sandwiches of pulled pork or beef and platters of sausages and cut-up chickens, but why fool with perfection? Ribs come in generous, meaty portions and this juicy half slab is more than enough for two people or two meals---if they last that long. Add on such sides as their vinegary greens and sweet-spicy barbecue beans and sit down to a feast. The décor is low-key and not at all glamorous, but then you’ll be too busy with the ribs to notice.
