Chef Walter el Nagar is saying farewell to Los Angeles with one last installment of his innovative pop-up Barbershop Ristorante. (After that, he will embark on a European tour in June stopping in Barcelona and Ibiza, and ending in Italy in his hometown of Milan.) It's hosted at the Service & Supply barbershop in Venice on Tuesday and Wednesday evenings from March 29th through April 2016. The cost is $75 for the five-course prix-fixe menu, with wine pairings available for an additional $25. Reservations are required for spots at the two seatings: 7 p.m. and 8:30 p.m. To start, diners are presented with a number of snacks, including Kitfo Toast (an interpretation of Ethiopian beef tartare), Prawns and Peas, and Fermented Caesar. The meal progresses with ceviche served in a halved coconut shell. Body Glue combines artichoke, pecorino, cured lemon, olives, bagna fria (cold, as opposed to its warm cousin, bagna càuda) and barigoule, while Consistency of Rice explores different textures of rice in one dish. For the "exploded" xiao long bao, generous portions of sea urchin are laid on top of pork jowls. Shards of passion fruit meringue crown the Tart-Tart, the sweet finale featuring avocado ice cream and chocolate.
