Finding good barbecue at this latitude hasn’t gotten any easier, but for some it’s a culinary crusade. Pork-starved patrons travel miles to this unlikely pit stop, just steps from Lake Champlain. Festooned with posters splashed with pithy commands ("Put some South in your mouth!"), the restaurant only seats two dozen guests, and ordering is done at the counter. But that's where the leanness ends. When a steaming basket of pulled pork arrives on your table, you’ll think you’ve landed in Dixie. The tangy vinegar kick betrays a loyalty to North Carolina, with hushpuppies along for the ride. The dark, hickory-smoked ribs look unassuming, but these slabs of beef are the real deal. After being slow cooked all day, meat falls right off the bone, and there's plenty to share. So slather the cornbread with honey butter and order a pint of Switchback (it's available on tap).
