Butchers & Barbers inhabits a historic Hollywood building founded by two studio heads in 1917 as apartments for aspiring actors. (Charlie Chaplin and Clara Bow were among the famous former tenants.) What is now the über-noisy bar and dining area was once a barbershop, and tools of that trade (including an old-fashioned barber chair) are positioned throughout. Meat hooks refashioned as light fixtures pay tribute to the other half of the restaurant's name, a reference to Sweeney Todd. There's also seating on the sidewalk patio, right on the Hollywood Walk of Fame. This classic American bistro comes from the Houston brothers: Mark and Jonnie. You'll know them from Piano Bar, La Descarga, Harvard & Stone and other successful bars, speakeasies and lounges. It was time to get serious about food. The kitchen turns out platters of charcuterie; mussels with white wine, tomato conserva, dried chili and thyme; and flat-iron steak with bone marrow jus. In house tradition, there is a serious cocktail program. A suggestion for dessert, chase your meal with a visit to Dirty Laundry, their speakeasy around the corner, for an adult "Cherry Popper" slushy, or a burlesque show at No Vacancy, a lounge in a Victorian-style house. This would nicely round out your Hollywood night on the town.
