There are more than 1,700 Chipotle Mexican Grill locations spanning the globe, but the prolific burrito chain got its start in Denver, its success steeped in a simple philosophy: quality, responsibly sourced, mostly organic ingredients, rolled into a steamed flour tortilla that's wrapped in foil. Chipotle hustles everything from pork carnitas and adobo-marinated and grilled chicken to slightly charred steak and barbecued shredded pork. The chain also features sofritas (shredded tofu braised with roasted poblano peppers and chipotle chiles), giving vegetarians a tasty protein alternative to meat. The huge burritos are then graced with lime-and-cilantro-scented white or brown rice, black or pinto beans, fajita vegetables and your choice of four salsas ranging from mild to raging, plus sour cream, house-made guacamole that's worth the up-charge, romaine lettuce or Jack cheese. The result is a two-fisted beast that can cover both lunch and dinner. Chipotle also serves salads dressed with a honey-chipotle vinaigrette, quesadillas, tacos --- crispy or soft, flour or corn --- and naked burrito bowls, sans the tortilla.
