Chef Jean-Georges Vongerichten’s culinary empire stretches around the world, including this restaurant at The Ocean Club, A Four Seasons Resort on Paradise Island. British colonial-style Dune is situated right on Cabbage Beach, arguably Nassau’s most beautiful, and showcases a menu of contemporary cuisine that draws inspiration from local ingredients melded with French and Asian culinary influences. Breakfast begins the day on a healthy note with smoothies, kale juice blends, egg white omelets and fresh fruit among its pancakes, eggs and other offerings that include Bahamian boiled fish with johnnycake. Lunch and dinner may start with fresh conch salad or sashimi and move to grouper with bok choy and ginger-chili vinaigrette, or roasted Peking duck with shallot confit. End on a light note with soursop or coconut sorbet, or go for the gusto with a passion fruit soufflé. The al fresco bar stays open all day long to serve wine, Champagne and cocktails.
