El Mirage is a vision, all right. The exotic ambiance, the tantalizing Middle Eastern cuisine, the memorable music and even the seductive belly dancers are reminiscent of the classic Arabian Nights. Dolmen, baba ganoush, hummus and tabbouleh share the spotlight with a few less-familiar dishes. Shanklish is a spread of cheese, tomatoes and spices, while lebne is a creamy yogurt dip drizzled with olive oil. Makanek is a fresh sausage, made on the premises using chicken or beef and served with a lemon pine nut sauce. Popular entrées include beef shish kebab, chicken shish ta wook and the kafta kebab. True connoisseurs of Middle Eastern cuisine consider an Arabian meal incomplete without partaking of the argileh, a two-foot community water pipe filled with fruit-flavored tobacco, and some Arak, the Lebanese liqueur of grapes and anise.
