Chef Roberto Donna's flagship restaurant contains a restaurant within---Laboratorio del Galileo---where he cooks an eight- to 12-course prix-fixe menu several evenings each week for a maximum of seven tables. Guests can watch their meal being prepared and even wander around the self-contained kitchen. The main dining room at Galileo serves Donna's frequently changing menu. Keep an eye out for the remarkably light pastas, the stuffed pastas with beautifully thin wrappers, fresh scampi with morel mushrooms, truffled rabbit loin and whole grilled fish. Desserts tend to be lush and extravagant and may include chocolate espresso cake. Donna's wine cellar is distinctive, consisting of hand-picked wines from Italy, France and the United States.
