Seattle's historic Fairmont Olympic Hotel is the setting for The Georgian’s French-inspired Pacific Northwest cuisine menu. A traditional destination for celebrations and special occasions, open to the public for breakfast and lunch only, it is one of the rare places in town to find elegance at early hours. Tables are beautifully appointed, service is professional, and the wine list is notable. Appetizers have ranged from Dungeness crab tater tots to a Walla Walla onion soup, while entrées may include scallops with crisp potatoes, leeks and truffle/bacon butter sauce; roasted rack of lamb with beets and toasted red quinoa; and organic free-range chicken wrapped in chorizo and paired with red wine risotto and balsamic onions. Dungeness crab bisque is accompanied by tarragon-infused crab cakes. Among desserts are milk chocolate caramel cream and crème brûlée. The Georgian serves afternoon tea, but opens for dinner only for special events and private parties.
