Exuding rustic charm with its pressed-tin ceiling, pub-like dining room and wraparound centerpiece bar with a copper countertop, Gorge makes the hubbub of Hollywood just outside its doors disappear. Executive chef and "Top Chef" alum Elia Aboumrad has created a small but daring menu. Pig ear tartine is a powerful blend of the namesake ingredient along with black truffles and mushroom duxelle, smeared atop crusty baguette. Cooked in its own fat for two days, rabbit rillettes is a tasty mess that is best layered on even more baguette, while a variety of cheeses and homemade charcuterie can be ordered separately or together. House specialty Toulouse-style pork sausage comes in a viscous sauce one might as well call gravy, and a huge, tender pork shank sits atop sautéed turnips and grilled romaine lettuce. Dessert is not to be missed, as there are several flavors of St-Honoré cake --- a flaky pastry filled with, perhaps, lemon meringue or pistachio, and finished with cream. A bold wine list of globally sourced varietals has been compiled by master sommelier Darius Allyn.
