The ingredients are mostly organic and sustainable, so while the food can be pricey, the quality is evident. The namesake green chile turns up as a rub on the Fulton Valley chicken, as a sauce in the burritos or in the flavorful green chile stew with slow-roasted Niman Ranch pork. Made-to-order salads include a variety of toppings, from vegetables to bacon to the signature chicken breast.
