Barbecue fanatics east of Raleigh crave authentic hickory-smoked whole hog ’cue basted with a simple vinegar and pepper sauce, peculiar to this part of the world. This hunger can be sated at Hog Heaven, a simple, utterly unfussy joint that focuses on its food, not its ambience. An acoustical tile ceiling with inset florescent lighting does nothing for the décor, but nobody cares, as they sit elbow to elbow at uncovered plain wooden tables. Other traditional Southern meat choices arrive with two vegetables and hush puppies (deep-fried cornmeal bites), in classic Carolina fashion. Fried chicken is always a winner. Ribs (falling-off-the-bone-style) are the meal deal on Tuesdays. But Carolina ’cue is about chopped whole hog, not ribs. Banana pudding is the dessert of choice, and sweet tea the quaff to target as no alcohol is served.
