An unassuming, somewhat spare, Mediterranean-inspired dining room, with well-spaced white tableclothed seating and exposed brick for a hint of rusticity, creates a subtly elegant atmosphere. The traditional menu holds true to its Spanish roots, as in the bacalao, sautéed codfish on a bed of risotto simmered in squid ink, with green peas and diced squid. For a complex dish with provincial flair, try the codorniz, semi-boneless Vermont quail prepared two ways, with vegetables and caramelized onions in a rice vinegar sauce. The wine list consists of Spanish and regional varietals including a comprehensive list of Riojas. The specialty desserts are worth the indulgence; try the membrillo, semi-frozen quince paste, passion fruit, cream cheese cake with cinnamon rice pudding; or the mousse de chocolate blanco, a tulip filled with white chocolate mousse, strawberry sorbet and rhubarb compote.
