French chef Joël Robuchon has brought a branch of his eponymous restaurant to Singapore at the Hotel Michael in Resorts World Sentosa. The dining room has neutral-hued, Art Deco-inspired interiors, and opens to a cozy indoor winter garden. A number of multi-course menus, including the create-your-own option during the week, deliver the haute French cuisine that has made Robuchon a culinary name known the world over. But committed gourmands may wish to challenge their appetites to the 16-course dégustation menu. The wine cellar houses more than 1,200 wine labels from around the world, with an emphasis on France. We recommend being indulgent from the outset, digging into the bread basket and ordering appetizers like the truffle and langoustine ravioli or the soft-boiled egg with smoked salmon and osetra caviar. Perhaps a dining companion will share the two-person dish of braised-roasted lamb shoulder in spicy semolina, or order your own crisp-topped pan-seared sea bass fragrant with lemon grass and stewed baby leeks. The desserts do not quite reach the culinary heights as the appetizers and mains; however, the dome of chocolate caramel on a crunchy hazelnut biscuit is a sweet and fun way to end the evening.
