Serving more than 200 modestly priced dishes in a comfortable environment, Kim's is well worth a drive to Encinitas. Diners enjoy savory noodle soups and vegetarian options galore. This Lumberyard eatery is known for its pho and rice paper items like ground shrimp wrapped around sugar cane and cooked over charcoal. Other specialties include steamed meatloaf with black pepper and peanuts, and crispy Cornish hen roasted with pineapple. We like the kitchen’s versions of traditional lemon grass-flavored seafood and grilled meatballs in grape leaves, too, as well as the vegan selections. For dessert, there’s the classic Vietnamese beans in coconut milk.
