Forget previous conceptions of Mexican cuisine --- this, the food of Puebla in central Mexico, is fresh, mildly spiced, and thoughtfully prepared. Las Cazuelas was the pioneer in this neighborhood, now joined by dozens of other restaurants and bars. Alfredo Aguilar, the owner-chef, has trained his friendly staff well. They are quick to recommend, and extremely helpful. Try the sweet plantains stuffed with picadillo, and the calamari salad with avocado. Marinated flat-iron steak with a tamale and cactus salad is a house specialty. Vegetable sides such as rice and refried beans are much better than most. Naturally, finish with flan.
