Two sisters helm this congenial bistro in the eastern part of Paris. Katia Levha caters to customers while Tatiana, formerly at L’Astrance and L’Arpège, mans the stoves in the semi-open kitchen. Expect astute seasoning, skilled cooking and a fine balance of tastes from the daily dishes. Among the highlights, the butter-poached veal brain with sorrel; the melting veal cheek with crispy vegetables, clementine cream and addictive wine sauce; and the souffléd chocolate tart with vanilla ice cream make for an impressive menu. Interesting natural wines are suggested to go along with that treat, such as the Alsatian Pinot Noir, Ergersheim, Domaine Brand et Fils La Table des Rois 2015.
