L'Écrin Restaurant Review:
L'Écrin is the très fine dining spot at Hôtel de Crillon. The restaurant is overseen by executive chef Boris Campanella since the departure of Christopher Hache. In a chic and modern setting, patrons enjoy dishes like pan-fried frog legs with watercress juice and fresh garlic; roasted turbot, squid "land and sea," and parsley cottage cheese; and sautéed farm veal, sweetbreads, peas and gravy. The great wine list is overseen by head sommelier Xavier Thuizat.
