The former owner Olivier Pateyron has passed the reins of the establishment to Daniel Rousseau who cooks traditional fare with forays into creativity. It’s worth the trip out to the twentieth arrondissement to taste cushions of smoked salmon and marinated scallops, roasted duckling fillet with quinces and stuffed figs, and a cigar-shaped cookie filled with rum ganache.
