Carey turns out dishes with California ingredients imbued with French technique; look for high-end oysters; amberjack with tomatillo aguachile; snapper with shelling and wax beans, shimeji, tarragon fumet; and butterscotch pot de crème. A wine list spotlights small production, organic or naturally produced wines from all over the globe, with many seafood-friendly selections from Old World regions with an "emphasis towards the obscure."
