Launch into dinner with Vietnamese-inspired fried calamari with cilantro, peanuts and mint. Or, on a cool winter evening, start with a hearty appetizer of roast polenta cake with chanterelles, artichokes and goat cheese with a sherry cream sauce and dots of balsamic reduction.
