Located in the West Village, The Marrow is helmed by chef Harold Dieterle, who also runs the show at Kin Shop and Perilla in the neighborhood. This restaurant focuses on the cuisines of Germany and Italy, his family heritage. With an extensive collection of German and Austrian whites, a dry Riesling or Grüner Vetliner is only appropriate once the large bones with silky, fatty marrow, topped with sea urchin, arrive. Go all in with the foie gras torchon with pine nut butter and maple syrup. Duck schnitzel is also a must; tender enough to cut with the side of a fork, with a bubbly crust and served traditionally with a cucumber and potato salad, spätzle and stewed wolfberries. Ginger stout cake with Riesling-poached pears and honey ice cream is the spicy, palate-cleansing way to finish off your evening.
