They fill the banquettes to sample chef Richard Blankenship’s latest snout-to-tail menu that honors the traditions of former chef Michael Sindoni. Try the whole pig's head carnitas served family-style with tortillas and radish salad, braised tripe with house-made chorizo, or spicy-sweet pig tails with refreshing kohlrabi slaw.
