Let the barbecue wars begin! In tiny Lockhart, Texas (30 minutes south of Austin), four of the top barbecue shacks in the state sit within five minutes from each other. Chisholm Trail is one of the newer ones that rolled into town in the 1970s. The owners admit that the stunt “was like putting a ballpark across from Yankee Stadium.” Yet the move paid off, as the lines certainly indicate. It’s distinctive for its bounteous cafeteria-like setting and assortment of side dishes, such as fried okra, homegrown squash and green beans. But the barbecue brisket, fajitas, pork chops, smoked turkeys, and the restaurant’s own recipe sausage are what make this spot hot. Fried catfish, served on Monday, Wednesday and Friday, are popular with locals, but the throngs of Austinites and out-of-towners are mostly here for the red meat and pork.
