In Korean cuisine, tofu is not just some bland, spongy, default substance served to those who shun meat. Instead, it's a key ingredient in its own right, crafted with care to almost melt-in-the-mouth savory softness and starring in rich, colorful soups, stews and stir-fries. Set in a quiet space off the street in the heart of Japantown, Doobu offers the classic meat dishes --- galbi, bulgogi, teriyaki --- that are staples in Korea. But its specialty is tofu, served fresh and hearty and ebulliently spiced in many different ways: with egg yolk and rice in bibimbap, with clear sweet potato noodles in chapchae, lightly fried and tossed with lettuce in green salads. Best of all is the specialty of the house, soft tofu soup, which finds the white stuff simmering alongside your choice of oysters, clams, shrimp, beef, pork, dumplings, ramen noodles, kimchi and/or many other options, and chili-peppered to your preferred degree of fieriness. An added fusion-y plus here, popular with regulars, is the option of shredded mozzarella atop this soup.
