You may have to wait for a table, because Firebirds’ food fires on all cylinders, so the place does a brisk lunch business and a hopping dinner trade. But the restaurant eases the discomfort thanks to the pleasant, Colorado lodge-style ambience and by occasionally sending out tastes of appetizers to waiting patrons. Featured specialty martinis include the signature Double Black Diamond Martini with house-made pineapple-infused vodka. Starters are substantial, so go easy on the Ranch Rings (onions battered with buttermilk and panko crumbs), the coconut shrimp or the crab cakes. Or indulge and make your dinner from several of these dishes. Wood-fired specials make great mains, such as steaks or salmon, which comes out crispy on the outside and tender on the inside. Firebirds' signature dishes include Asiago cream chicken pasta, daily fresh fish, ribs and meatloaf. A good selection of burgers and sandwiches completes the menu. For dessert, choose from crème brûlée cheesecake, a warm chocolate brownie, Key lime pie and more. The wine list is fairly mainstream although offerings are for the most part decent.
