Joe's offers Shanghai steamed buns that somehow manage to enclose hot soup in pastry. Order them with crab or pork, then suck out some of the savory broth before dipping the dumpling into black vinegar and ginger sauce and gobbling it whole. Other delights to try include diced chicken and peanuts with chili sauce, braised sliced abalone with bamboo sprouts, and shredded pork complemented by plum sauce.
