Once a week, the chefs create curry from the signature ingredients of Thai food: lemon grass, chilies, makrut limes, garlic, coconut milk and fish oil, among others. That attention to freshness has been the same for more than 30 years. For the best experience, choose a range of dishes that balance spicy, sweet, salty and sour flavors. Some examples: The seafood hot pot is a must for spiciness. Pad thai, a classic dish of rice noodles and tofu, veers toward the sweeter side, while the massaman stew of beef, potatoes and peanuts leans salty. Sour flavors come through in the papaya salad with tomatoes, garlic and roasted peanuts. Thai beer is the best accompaniment, though some of the lighter red wines and off-dry whites also work well. Fried banana ice cream is a sweet end to the meal, especially for those who need to tame flames. Longtime customers may miss the colorful décor, but the added seating is a plus on busy nights.
