Purists can choose the classic Swiss fondue (with Gruyère, Raclette and Fontina cheeses), but the restaurant’s popular signature fondue mixes cheddar and Emmentaler Swiss with beer and garlic. And then there are the bacon-bourbon, spinach-artichoke and blue cheese-bacon variations, not to mention the seasonal specials --- all of which keep fondue-lovers returning to this low-light romantic dining spot. Meat, seafood or vegetarian fondues form the foundation for main courses, which include a choice of cooking liquids (oil or three broths). For dessert, there’s the chocolate fondue, which shouldn’t be missed. The eclectic crowd ranges from young women bantering about love to couples out for a night away from the kids. Wine is a natural pairing with cheese, of course, so it’s hard to go wrong when choosing from the wine list.
