In the sleepy 'burb of Simsbury, chef Chris Prosperi created something lively and vital: a charming bistro that serves inventive, ever-changing fare most nights while hosting a series of special wine dinners on others. Enjoy a bottle of wine from the brief but choice list while digging into appetizers like the crispy goat cheese and potato tart, or lump crab cocktail with tomato-horseradish vinaigrette, pickled celery root and just a splash of Grey Goose vodka. Deceptively simple, elegant entrées include Gorgonzola-crusted flat-iron steak with garlic whipped potatoes and rosemary demi-glace and a slow-roasted, glazed pork loin complemented by vegetables. It's not only Prosperi's reputation that has grown since Metro Bis' opening; co-owner and manager Courtney Febbroriello has earned her own notoriety as author of tell-all memoir “Wife of the Chef,” which also lends its name to a tasting menu of four wine-paired courses, accompanied by a copy of the book.
