Parallel 37, named for the latitude line that runs near the Bay Area, is fronted by a glass entryway from the hotel's lobby leading to a spacious bar and lounge. The main dining room further within is detailed with modern glass wall treatments and natural-edge wood tables, including communal tables and a chef's table with a kitchen view. Food presentations favor multicolored and hued stripes of delicately organized elements: hamachi sashimi rests like the knot of a colorful bow tie comprised of pickled green beans, daikon and shaved watermelon radishes. An array of seafood delicacies from lobster to scallop is a vibrant coral reef across one's bowl, met with a tableside wash of broth to deliver an upscale bouillabaisse. True Japanese Wagyu, A5 grade, is sourced from the Hokkaido prefecture and presented in a combination of striploin and aged rib-eye. Wine pairings represent an international selection balanced against local California offerings. The flair for watercolor-like arrangements carries through to desserts.
