The 21c Museum Hotel is home to modern art galleries, and the exhibitions extend into the contemporary dining room and very hip bar next door. Artwork changes, but the quality of chef Mike Wajda’s updated Southern menu remains consistent. Signature dishes since Proof debuted --- the bison burger and the charred octopus --- keep company with several newer selections. Wajda introduced a hog chop sourced from nearby Woodland Farm (which has the same owners as the hotel and restaurant) and has gone to the other end of the dining spectrum with a vegetarian entrée of mushroom spaghetti dressed in ramp butter. Choose from chilled farmer’s vegetable soup, cavatelli with duck confit, and chili crisp salmon, too. Desserts feature a rhubarb tart, an assortment of Kentucky cheeses, and house-made gelati and sorbets. Enthusiastic staff is adept at pairing dishes with the wine list, which includes an excellent section of dessert wines to complement those final treats.
