Republic Chophouse Restaurant Review:
Republic Chophouse is located in a renovated, historic 1900s building downtown. Begin with savory donut holes, stuffed with shredded beef and kissed with pan gravy, red chile-mango chutney, micro greens and ground bacon. A must-try for dinner is the Irish New Yorker, a strip steak marinated in Guinness stout, whiskey, sesame oil, garlic and oregano with a shot of Jameson whiskey for dipping. Alternatively, try the 12-ounce, bone-in beef tenderloin, crusted with lump crab meat and Boursin cheese. Crêpes de la cruz --- savory, cilantro-lime crêpes surrounding black beans, corn, bell pepper, cheddar and jasmine rice, seasoned with Southwestern spices and accompanied by a spicy tomato sauce and cilantro-lime crème fraîche --- are good for a lighter appetite. The wine list features more than 40 white and sparkling wines and some 70 reds. Save room for a slice of the classic red velvet cake or the chocolate truffle torte. Start the evening early or end it late with a stop at the lounge bar.
