Josh Henderson’s food served from a vintage Airstream trailer earned such a following he was compelled to lay down more permanent roots. While staying true to his American diner food theme, the brick-and-mortar location of one of Seattle's first food trucks presents a more upscale version. Lots of windows, bright green booths, and homey touches such as water served in Mason jars lend down-home style. Energized and friendly, efficient servers create a welcoming atmosphere to accommodate families, singles and couples. For breakfast, the griddle cakes are served with house-made brown sugar syrup and the deconstructed corned beef hash is topped with a fried egg. And how many diners offer a full bar with wine and beer on tap? Expect lines for weekend brunch and often on Friday and Saturday nights, too, but be assured it's worth any wait.
