About the restaurant: Solage Calistoga’s destination restaurant feels like the community hub in an upscale Arizona development. It may be the drought-friendly landscaping: grasses, olive trees, palms, lavender, oleander. Or maybe it’s the pool adjacent to the dining area, music wafting hypnotically over sun-tanners.
Food & Drinks: Of the menu's two long columns, the right is the more sinful side, while the left side offers lighter choices; both satisfy. Start with the wood-grilled broccoli salad with roasted chestnuts, Mandarin, orange soy and pickled ginger or the spicy gulf shrimp a la plancha with poached kumquats and chile padron hot sauce. Hearty entrées include seared day boat scallops with pumpkin-vanilla bean purée and the slow-roasted lamb shoulder with poblano mole verde and yellow hominy. End with grilled pineapple with dulce de leche ice cream or butterscotch rum pudding topped with crème fraîche. Well worth a weekend brunch visit, try the Lucky Pig for two --- slow-roasted pork shoulder, black sesame crêpes and pickled pineapple. For the quintessential al fresco wine country experience, the 40-seat outdoor courtyard is open year-round; for a party of 10 or less, book the intimate open-air dining room "Chef's Atrium" and enjoy a seven-course tasting menu.
