Mountain Standard Restaurant Review:
This sibling of Vail’s Sweet Basil is furbished with earth-toned hues and wood-filled accents. The décor reflects the forte of the open kitchen: cooking over an open flame. But that age-old technique yields the most innovative of dishes, from appetizers like coal-roasted olives with pine nuts and raisins to grilled trout drizzled with smoked almond milk over farro verde. Other highlights include fried oysters with house-aged hot sauce, caramel lamb-stuffed bao and S’mores pie. Though the bar’s a bastion of bourbon and beer, don’t ignore the wine list, which runs the gamut of geeky stuff from Anjou, Friuli and the Wachau.
