Nobu restaurants offer the straightforward, elevated Japanese cuisine of chef Nobu Matsuhisa, and the outpost at the Capri hotel is no different. A limited menu is available poolside and patrons may also eat at the bar or in the pristine dining room. Choices vary based on availability and the season, but Nobu fans can breathe a sigh of relief that the signature dish, black cod with miso, is included in the line-up. Sushi and sashimi lovers will find top-quality bluefin toro, big-eye tuna and king salmon. Cold dishes, such as a spinach truffle yuzu salad and the house version of tiradito --- a Peruvian raw fish dish --- are unique and intriguing, marrying flavors in surprising ways. A Wagyu beef special will delight carnivores. Nobu's own Cabernet and Chardonnay appear on the small but varied wine list. The saké menu, developed exclusively for Nobu in the U.S., is worth a look.
