Yokohama-born Erika Koike decided it was time people in this neck of the woods were introduced to more than flying shrimp off a hot grill. That's why she pushed up her sleeves and opened One Bite in a tiny sliver of storefront right next to Sam's Club. Koike's true expertise is izakaya (tavern-style Japanese dining). With that in mind, her very minimalist but tasteful dinette has presented a variety of pleasures---none of which resemble sushi or the ubiquitous sukiyaki. Instead, she urges us to try smaller tidbits ranging from gyoza filled with shrimp, pork or chicken, okonomiyaki (a pizza-like creation made with egg, seafood and veggies), grilled scallops wrapped in bacon and two-fisted cha-siu spareribs. Do get a Ramune soft drink, akin to our American pop, to go with the food. Leave plenty of room for mochi rice-encrusted ice cream or a shaved, fruity flavored ice cone.
