This vast selection of seafood favorites keeps Houstonians stuffed and satisfied. Pappas dots the suburbs with cheery contemporary seafood houses that offer fried favorites, as well as a huge lineup of fresh grilled and sautéed seafood from oceans all over the world. For starters, try the creamy crawfish or lobster bisques; cold jumbo shrimp with a kicking rémoulade or cocktail sauce; or the blue crab cakes with crawfish and pico de gallo in a white wine sauce. Check the blackboard for such delicacies as Hawaiian mahi mahi, Canadian scallops, Maine lobster, Gulf Coast drum fish and those local heroes, snapper and red fish. Any can be prepared blackened Cajun-style, pan-broiled or charbroiled. For a rich dish, try the Opelousas, blackened and topped with blackened oysters, shrimp and crab meat, or the Orleans featuring crawfish and crab meat in lemon butter.
