The Pink Adobe Restaurant Review:
Not far from the Roundhouse, the state's capital building, lies The Pink Adobe, one of the oldest restaurants in Santa Fe. It was closed for a bit, but returned in 2013 with many of the same dishes that made it special. Like its former self, too, the ambience is all Northern New Mexico, with adobe walls, New Mexican art, hand-painted tables and rustic-looking glassware. For dinner at “The Pink,” as locals call it, start with giant escargots, or the shrimp rémoulade punctuated with a Cajun flair, a note that extends to the Fried Shrimp Louisanne. The place is also known for its shrimp salad and the seafood enchilada, which is The Pink's way of counter-programming its menu to New Mexican food standards. For dessert, have the French apple pie. This is one of the great watering holes of downtown nightlife as well. Wine and beer are available, along with cocktails and margaritas (Black Dragon blends Corazon Silver tequila, Cointreau, Chambord and lime).
